I have made these pancakes twice in the last week. I found them on a paleohacks blog while browsing paleo approved recipes and it just so happened that I had what I needed in the pantry to make it so I thought I’d give it a try They are so quick and easy to do, paleo approved, and my family loves them too!
Here’s what you need!
- 3 eggs
- coconut oil (cold pressed)
- 2 TBSP honey
- 1/3 cup Coconut milk
- 1/2 tsp vanilla extract
- 1/4 cup Coconut flour
- 1/8 TSP baking soda
- pinch of salt

Mix up your eggs, coconut oil, and honey. Add the coconut milk and vanilla extract. Mix some more. Add the coconut flour, baking soda, and salt. Mix some more.
Heat up your skillet. I used a little bit of ghee to make sure my pancakes don’t stick. Once the skillet was hot I poured the batter using 1/4 cup per each pancake. let it cook and when you notice the underside of the pancake is golden brown flip and let that side cook.
The pancakes come out light and fluffy. I topped my pancakes with an all natural peanut butter, maple syrup, and sliced bananas. Breakfast is served!
