After a week or so of staring at the list of ingredients pulled off the Internet for Paleo cookies I decided late one night to give it a go and every couple nights since then….
They are AMAZING! To make sure I wasn’t crazy and just desperate for something that looked like dessert I had friends, family, fiancé, and my littles taste test them. Give them a couple and they take a couple more. Clearly they are delicious!
Ingredients:
1 1/2 cups almond flour
1/4 tsp baking soda
1/4 tsp sea salt
1 egg
2 tablespoons coconut oil, melted
1/4 cup pure maple syrup
1/2 tsp vanilla extract
1/4 cup enjoy life chocolate chips
#1. Let the egg and maple syrup come to room temperature. (30 minutes or so)
#2. Mix together almond flour, baking soda, and salt.
#3. In a seperate bowl mix together egg, coconut oil, maple syrup, and vanilla extract.
#4. Combine ingredients into one bowl. Mix well.
#5. Add chocolate chips. Refrigerate mix for 30 minutes.
#6. Pre heat oven to 350 degrees. Prepare cookie dough on pan. I lined my cookie pan with parchment paper (but I’ve also used wax paper and aluminum foil)
#7. Bake cookies for 7 minutes, take back of spatula and press down lightly on each cookie for shape. Then bake 5 more minutes.
#8. Let cool, and enjoy!!!
